Mavia Bakery is a women-led social enterprise and sourdough speciality bakery based in Beirut, Lebanon. Mavia crafts artisanal sourdough loaves and sweets from locally-grown wheat varieties, and serves wood-fired sourdough pizza on Friday nights, and all-day brunch on Saturday.
Mavia cultivates eight local wheat varieties, which is then milled whole in our stone mill in Zahle to create the flour.
At the heart of Mavia’s mission is the cultivation and promotion of local wheat varieties that have gone out of mainstream use. We work with farmers in the Bekaa region to grow ancient, heirloom grains pesticide free. We then stone mill them in our artisanal mill in Zahle, ensuring a rough and wholegrain flour that is nutritious.
We exclusively employ women of all backgrounds, teaching them to work in a professional kitchen and seek out better life opportunities for themselves.
We teach them how to make artisanal sourdough bread using our in-house local flour mix, in addition to teaching them how to make desserts.
